West coast lobster tail – also called the spiny lobster / common local name crayfish. This delicacy is one of sweetest of all species of lobster.
- Keeping the temperature nice and cold before cooking is very important and therefore it is recommend to thaw out in the fridge for at least 6 hours.
- Cooking methods: Boiling, steaming, grilling on the Braai, par boil and poaching. All these methods work very well and depending on your presentation you require it will leave you with very little fuss in removing the meat from the shell.
