Easy Duck Breast Recipes for Gourmet Home Cooking

Duck breast is widely considered a premier meat due to its savoury, iron-rich flavour profile. While still a white meat, the colour is slightly darker than one might typically expect from poultry. Duck breast is highly prized for its thick fat layer that forms a crispy outer layer and a deliciously succulent meat on the inside when cooked.

Garlic Roasted Duck Breast

Ingredients:

  • 1 duck breast (skin on)
  • 2 cloves garlic (cut into 1/8-inch strips)
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 sprig fresh rosemary

Directions:

  1. Start by placing the duck breast skin-side down on a cutting board. Cut a small slit 2/3 of the way through the breast and season with salt and pepper.
  2. Preheat the oven to 200˚
  3. Heat a skillet over medium-high heat. Place the duck breast skin-side down in the skillet and cook on each side until browned (30 seconds).
  4. Transfer the duck breast to a clean work surface and place three to four garlic strips inside the slit. Place a rosemary sprig over the garlic and top with the remaining garlic strips.
  5. Place the breasts in a baking pan and bake in the oven until the centre reaches 50˚C (about 10 min). When done, cover in aluminium foil and let rest for 5 minutes before slicing.

Garlic Roasted Duck Breast     

Sous Vide Duck Breast

Ingredients:

  • 2 boneless duck breast halves (skin on)
  • salt and ground black pepper to taste
  • 2 tsp fresh thyme leaves
  • 1 tsp vegetable oil

Directions:

  1. Cut the duck breast with shallow crosswise slashes across the skin. Season the skin with salt, and then generously season the meat side with salt, pepper, and thyme. Place the seasoned duck breasts into a heavy-duty reusable plastic bag. Seal the bag, removing all the air, and place it in the refrigerator for 1 hour.
  2. Fill a Dutch oven about 2/3 full of water and place it over medium heat (57˚C). Maintain and monitor the temperature with a thermometer. Place a silicone hot pad on the bottom of the pot.
  3. Place the plastic bag with the duck breast into the Dutch oven. Cook the breasts, moving the bag around occasionally, maintaining a temperature of 57˚C for 1 hour.
  4. When done, remove the duck breasts from the bag and pat them dry and generously season with salt.
  5. Heat an oil skillet over high heat. Place the duck breasts skin-side down in the skillet until the fat renders and the skin turns a golden brown (5 minutes). Flip the breast and cook the opposite side for 1 minute. Let the meat rest for at least 2 minutes before slicing.

Grilled Duck Breast

Ingredients:

  • ¼ cup Worcestershire sauce
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • ½ tsp hot sauce
  • ¼ tsp black pepper
  • 4 duck breast halves (skinned)

Directions:

  1. Stir the Worcestershire sauce, olive oil, garlic, hot sauce, and pepper in a large bowl. Add the duck breasts to the mixture and cover the bowl to marinate in the refrigerator (30 minutes to overnight).
  2. Preheat the grill to medium-high heat.
  3. Remove the duck from the marinade and cook on the grill for 5-7 minutes each side. A thermometer inserted into the centre of the breast should read about 74˚
  4. Remove from the grill when the meat has cooked to the desired level of doneness and allow it to rest for a few minutes before slicing.
