Even if you’re not someone who spends a lot of time in front of the fire, this foolproof, step-by-step guide is all you need to braai the perfect kudu loin.

The Ultimate Kudu Loin Heritage Day Braai:
Ingredients:
- 1 kg kudu loin
- ¼ cup olive oil
- ¼ cup balsamic vinegar/red wine vinegar
- 2 tbsp soy sauce/worcestershire sauce
- 3-4 cloves of garlic (minced)
- Fresh rosemary (to taste)
- Coarse salt and black pepper (to taste)
Instructions:
- Prepare the meat by trimming away any silver skin on the loin.
- Mix all of the ingredients together either in a large bowl or a sealable bag. Coat the meat thoroughly and allow it to marinate in the fridge for at least 2 – 4 hours (even better if you can let the meat rest overnight).
- Be sure to take the kudu loin out of the fridge about 30 minutes before braaiing. Bringing the meat to room temperature will allow your kudu loin to cook evenly.
- Place the kudu loin on the grid directly over the hot coals. Sear the meat for 2 – 3 minutes on each side to create a delicious crust that will seal in the juices.
- Once the meat is seared, move it over to a slightly cooler part of the braai (preferably indirect heat), and allow it to cook for another 4 – 6 minutes, turning occasionally. Take the meat off the coals as soon as it’s cooked to medium-rare.
- When taking the kudu loin off the grid, place it on a warm platter, tent it loosely with aluminium foil, and let it rest for another 5 – 8 minutes. This will allow the juices inside the meat to redistribute through the loin instead of spilling out onto your cutting board.
- Serve immediately with your preferred choice of side dishes. As it is Heritage Day, we would personally recommend either braaibroodjies, garlic bread, or pap and chakalaka. Enjoy!
