With so many options, it can be tricky to decide on what we should put together to throw the perfect festive feast. Should you serve duck, or wagyu, or perhaps giant tiger wild prawns?

What Makes a Good Christmas Feast?
Just like what makes good meat or wine, a good Christmas feast is made of what you like. It’s your Christmas, so you get to decide what’s on the table, whether that’s oysters, burgers, or a good old roast. That being said, most of us have a traditional idea of what Christmas is; usually some sort of roasted or braaied meat.
The best meats for a Christmas spread are wagyu steaks (fillet, flank, ribeye, or sirloin) and duck. Here’s how to cook them and what to eat them with.
Wagyu Steak
Blake’s is a firm believer in a good wagyu steak, especially at Christmas. There’s nothing like seeing someone’s face light up at the heavenly smell of spitting fat and herbs. If you don’t know what to get someone, a good wagyu is always the way to go.
Wagyu can be challenging to braai unless you’re a seasoned expert. Since there’s so much fat marbling, all of it might melt together and cause a little fire. Instead of the braai, we recommend using a pan.
Decide on whether you’ll be working with sirloin, flank, ribeye, rump, or fillet. Fry your steak on one side, flipping it when it’s the colour you would like.
After your steaks are cooked to your preferences, let them rest in garlic, salt, and rosemary butter. Eat your steaks with crispy roast baby potato and carrots.
Whole Crispy Roast Duck
Duck (whole, breasts, or legs) is an excellent dish to make for special occasions. You can glaze it to make it crispy and add honey if you’d like to make it sweet. Also, it yields a lot of fat–perfect for cooking potatoes, vegetables, or even breakfast eggs.
To cook duck, stuff the cavity of a whole duck with lemon and garlic (which will come out after cooking), and cook the duck evenly for about 3 hours. Baste it with honey, balsamic vinegar, and lemon juice halfway through, turning and rebasting every 10 minutes. At the end of the three hours, you should have a brown, crispy, flavourful duck.
Serve duck with bacon and garlic green beans, roast baby potatoes, and honeyed baby carrots.
