Argentinian Pink Prawns

This species of shrimp is caught in the cold, wild waters of the South Atlantic off Patagonia. Known for their vibrant reddish-pink colour when raw, they offer a delicate, sweet, lobster-like flavour and texture.

Argentinian pink prawns are delicate and cook very quickly, usually around 2-3 minutes per side. If cooked for too long, it can take on a rubbery texture. To avoid this, it is best to sear your prawns over high heat for a short time, until they turn opaque. They are best paired with simple, bold flavours such as garlic, lemon, butter, and olive oil.

When it comes to serving oysters, it is best to adopt a minimalist approach. West Coast oysters are already quite sweet and flavourful, so many would recommend eating them with no sauce. However, if you would prefer to add some extra flavour, you cannot go wrong with classic pairings such as lemon wedges, tabasco, or fresh horseradish. Oysters are best served on crushed ice and eaten as soon as possible after shucking.

Whether you’re roasting, grilling, or pan-frying your salmon, it is important to bring it to room temperature and dry it completely before cooking. This is all to ensure your salmon cooks evenly and gives you that nice crispy skin and browning of the meat. It is vital not to overcook your salmon (aim for an internal temperature of 49°C–54°C) and to keep the skin on to prevent the meat from drying out. Classic flavour pairings include lemon butter sauce with fresh dill, lemon juice with garlic and thyme, or a honey and mustard glaze.
